Prepping and cooking:
- Avocado-Tomato Salsa – Place all the ingredients in a medium bowl and mix until combined. Set aside
- In a medium bowl, whisk the eggs with the smoked paprika and salt. Set aside
- Heat a large pan over medium-high heat
- Add the breakfast sausage and cook, stirring frequently, until browned. Typically takes 4-5 mins.
- Transfer the cooked sausage to a separate dish, keeping the juice in the pan.
- Reduce heat to low and add the eggs. Once cooked, transfer to a separate dish
Assembling the Burrito
- Add about 1/4 cup of the avocado salsa onto each tortilla, followed by a quarter of the sausage, a quarter of the eggs, and 1/3 cup of cheese.
- Fold the sides of the tortilla over the filling and roll, tucking in the edges as you go
- Lightly coat the pan with oil and heat to medium heat.
- Place the wrapped burrito on the pan and cook until light and golden brown.
