Garlic Butter Steak Bites and Cheesy Smashed Potatoes

Ingredients

  • 2 NY Strip steaks
  • Steak seasoning (to taste)
  • 24 oz baby potatoes
  • Olive oil (as needed)
  • Salt (to taste)
  • Black pepper (to taste)
    Garlic powder (to taste)
    2 tbsp butter
  • 1 tbsp garlic (minced)
  • Shredded cheddar cheese (to taste)
  • 3 green onions (chopped)

Instructions

For the Potatoes

  1. Place a pot of water on the stove to boil.
  2. Add the baby potatoes and cook them until they are sufficiently tender to be pierced easy with a fork.
  3. Preheat a griddle over medium heat.
  4. Transfer the boiled potatoes onto the griddle, using a spatula to firmly press each potato down, smashing them into a flattened shape.
  5. Drizzle additional olive oil over the potatoes and season them with salt, pepper, and garlic powder.
  6. Continue to cook, flipping occasionally, until each potato is crispy on both sides.

For the Steak

  1. While the potatoes are cooking, prepare the steak by cutting it into bite-sized cubes.
  2. Place the cubes on a different area of the griddle. Season liberally with steak seasoning and cook, turning occasionally

For the Garlic Butter

  1. Once the steak is cooked, educe the heat of the griddle.
  2. Add the butter and minced garlic to the steak, stirring continuously to coat the steak bites in the garlic butter mixture

Final Assembly

  1. Once the potatoes are crispy, sprinkle a generous amount of shredded cheddar cheese over them, allowing the heat to melt the cheese.
  2. Finish by scattering the chopped green onions over both the steak and potatoes.
  3. Serve immediately while hot.
  4. Enjoy!
